Real-time encoder adjustments for Generic LCDs

Instead of using macros, it would be nice to provide guided processes on the generic LCDs themselves. An example of this would be a guided bed leveling procedure that lists out the steps and uses the encoder to raise or lower the Z, similar to how ultimaker does its bed leveling procedure. Looking at the current tools available, it appears that we can create menus and send singular gcode commands, but it does not seem like we can utilize real-time control of the encoder for things like temperature adjustments or motor movements. Ideally, in a case like this, I could have a generic popup menu that automatically selects something for the encoder to adjust, and the user can just start spinning the encoder, and click when they are done.
