      Currently running:
Firmware Name: RepRapFirmware for Duet 2 WiFi/Ethernet
Firmware Electronics: Duet WiFi 1.02 or later
      Firmware Version: 1.21 (2018-03-21)
      WiFi Server Version: 1.21RC4(08b3)
      Web Interface Version: 1.21-RC4

I'd like to get to the most current stable versions.

What are my upgrade paths, items do I need to update - all the above?
Do I need to backup current configuration, and if so is there an easy way or do I need to download each file one by one?

I suggest you update DuetWiFiServer to 1.21 first, because it is compatible with the other files, so it can be done independently. Then follow the "Usual procedure" at https://duet3d.dozuki.com/Wiki/Installing_and_Updating_Firmware.

Recent versions of Duet WebControl make it easy to back up your configuration. Go to System Editor, clock the check box at the top of the files list to select all files, right click on one of them, then select "Download as ZIP".

          Thank you!

          I'm now at:

Firmware Name: RepRapFirmware for Duet 2 WiFi/Ethernet
Firmware Electronics: Duet WiFi 1.02 or later
          Firmware Version: 2.01(RTOS) (2018-07-26b2)
          WiFi Server Version: 1.21
          Web Interface Version: 1.22.3

I don't believe I need to upgrade to any of the RC's, is that correct?

That's correct, unless you need any of the fixes or improvements from the current RC.

ok, thanks, did the Web Interface Version 1.22.3 remove the drop down for the default Gcodes normally up in the top left?

It replaced it by a history that gives you a drop down list based on the first few characters that you type.
