My probe is mounted 20mm right of my printhead. Does the firmware not need to be aware of this when calculating the correct compensation?

Maybe it's already in there and I just missed it?

Yes, you put the probe XY offset relative to the tool reference point (which is the nozzle, if you have only one of them) in the X and Y parameters of the G31 command.
