      I put a 40mm fan on my E3D which may be overkill, but it's quite loud at a max of 255. Can this be set to 150 in the config somehow so when the hotend reaches 50C (or the trigger temperature), it turns the fan on S150?

        Yes you can do that. Add the S parameter to the M106 command that defines the thermostatic fan parameters.
