At present the extruder speeds and movement amounts on PanelDue can't be customised. But you can set up macros for particular operations that you need to perform frequently.

Are there any plans for making the UI customizable in the future and if so, to what extent? I saw a thread someone where that indicated that you could directly edit the firmware, but I'm sure I'd just bungle something up lol

I'll probably make it more customisable in future, but the firmware builds for 5" and 7" screens are very tight on memory. So we'll need to move to a chip with more memory before we can add significant functionality to the firmware. This is planned.
