What is wrong with my infill?

Ok, I give up, I just can't figure it out why my infill is so broken. I hope you guys can help
I'm printing china PETG (brand new high end PETG has the same effects). With an anycubic Predator with a Mosquito hotend and a Bondtech extruder. Outer Perimeters and solid infill no problem at speeds up to 100mm/s, I already reduced the infill speed to 40mm/s so I doubt it's the extruder.

Only Slic3r, with similar settings, same result

Go through e-steps and filament diameter calibration to get mavhine extruding actuately.
Consider tuning linear/non linear extrusion correction.
Ensure nozzle diameter is set right.
Check extrusion width is set to around 105 -110% of nozzle diameter.
Be aware that some infill uses bridging parameters.
Make sure volumetric rates are in the right region foe the nozzle hotend combo. A v6 with a 0.4mm nozzle will do around 10mm3/sec.

Well, seems like my perimeter overlap was so small, that the infill layer didn't properly connect and was "bridging" mid air. I increased the perimeter overlap and now the issue is gone ....
