So I'm setting up an AC heated bed with a SSR and I have a Duex5 and would like to map the heater output to e6 as well as the thermistor to the e6 thermistor slot. What parameters do I have to change to remap the default bed heater to the e6 output as well as the e6 thermistor?

Use the M140 H parameter to assign the bed heater to a different heater. It will use the temperature sensor associated with that heater by default. Use M305 to configure the sensor. E6 is heater 7, so you need M140 H7 and then M305 P7 with your thermistor parameters.
