      is it plausible to connect a pressure sensor to the duet 3 with a pid control to run a stepper motor?

        If it's the Z motor you want to control, then yes. See M951 and M594. Caution, this feature is experimental.

            I was actually looking to run an extruder.

            That would require a modification to the M951/M594 code, to generalise to allow a different axis to be used. If the intention is to extrude with constant pressure, then a further modification would be needed to allow the PID controller to control motor speed instead of position.
