From THIS PAGE: "To use this sensor, connect the Brown wire to 5VDC, Blue to Ground, and a 10K Ohm resistor between Brown and Black. The Black wire will now sit at 5VDC unless an object is in the detection range."

Do you want to use it as an endstop?

I want to use this to build an auto feeder.
          Principle of operation:
If the pellet is next to the sensor - nothing is happening,
If the pellet is far from the sensor - the sensor starts the fan feeding the material.

Is this the only task for the Duet3?
You can use it as pellet feeder, but a much cheaper controller will do it as well.
Even a simple 5V Relais might be OK.

I need to know, if your fan can be controlled by a Relais. Is it a DC or AC motor?

I hope the 5V relais can drive a 24V fan?
Here is a schematic. I hope you can read the symbols ( or know someone how can)
