@btj It sounds like you are still using RRF2, so it may be a good idea to upgrade to RRF3. If you don't want to upgrade, see https://duet3d.dozuki.com/Wiki/Connecting_a_Z_probe#Section_Software_setup_Duet_2_WiFi_Ethernet_running_RepRapFirmware_Num_2 for further instructions.

@btj Your config.g is a mix of commands for RepRapFirmware 2 and RepRapFirmware 3. Please send M115 and post response, so we can see what firmware version you are running. Then we can best advise you on the correct commands.

If you're not planning on updating the firmware to the current version (v3.3, but see update instructions here: https://duet3d.dozuki.com/Wiki/Installing_and_Updating_Firmware#Section_Updating_from_RRF_2_x_to_3_x ), then it will be easiest to regenerate your configuration files using the Configuration tool https://configtool.reprapfirmware.org/Start
This is because you have generated a configuration for RRF 3, see first line of your config.g:; Configuration file for Duet WiFi (firmware version 3)
I expect currently none of your temperature responses will be correct, fans won't work, and there will be no tool, as well as the probe not working. All the lines in config.g that have C or P parameter with "[something in quotes]" will need to change, so it's easier to regenerate the files with the correct firmware version selected. On the https://configtool.reprapfirmware.org/General page, under "Firmware version:" make sure you select "2.03 to 2.05".
If you want to update to RRF v3.3, your existing config should work, but you need to tidy up your Z-probe configuration. See @chrishamm's post earlier.

From your earlier config.g, you will need to change your Endstop and Z-Probe sections.
