I am having a real hard time level my bed

I know, I know.. this question! I feel like a right n00b for asking this, but I can't seem to figure out how to get my bed to keep my z-offset and level correctly.
I have a Ender 5 Plus with an EZABL Pro Sensor for levelling. I have setup my sensor and calibrated as instructed by TH3D and the sensor sits evenly on the wrench.
I can see that my z-offset is -3.40 and when I set this in my config.g file, as seem below:
G31 P500 X0 Y0 Z-3.40
But when I re-home the nozzle is way off the previous setting.
I read that I need to update homeall.g and homez.g, but not sure what command I need to use to get my z-offset to stick.
Is there a bed levelling for dummies link which I can follow on how to level my RepRap printer with a EZABLE sensor?
Again, apologies for the dumb question, but I feel like a dummy right now.

Having a Z probe Trigger Height setting in G31 of -3.40 says that the probe triggers when it is below the nozzle - how is that possible?

From the G31 documentation (abbreviated some):
G31: Set or Report Current Probe status

Znnn Trigger Z height
Notice there is no parameter named Z offset - so we are talking about the Trigger Z Height parameter - correct?
@fcwilt Yeah, looks like I'm trying to set the z-offset in the wrong spot which then makes me ask, where do I set the correct z-offset?
@fcwilt oohh... sorry. When I level my bed and configure it as per the EZABL setting, it's all good.
But when I go to print, the nozzle is roughly 4-5 mm above the bed and I babystep down to set the offset... and once I get that offset number, I want to set that somewhere like I do on Marlin printers.

@infidelprops the 'set z offset like Marlin' is what you are doing when you set the G31 Z trigger height. You are telling the printer that when the z probe tiggers during a G30 probing move, set the Z height to xx value.
In your case, you were setting it to -3.40mm. I.e. when the probe tiggers the nozzle is 3.4mm below the bed surface which is mostly likely wrong. You just need to work out what the correct number to put in the G31 Z in your config (I'm guessing it'll be about 1.5mm)
Edit: this part of the z probe guide should tell you how to correctly determine what your z trigger height should be:
