But here you have only performed bed level with the leads crews. Not any mesh, i.e. G29. At least I don't see that in bed.g file.
There is something seriously wrong.... Why are the x and y coords of you sample points not in a grid? Isn't that that the plot straight from above?it must the perspective...

Does your bed surface have a bit of a reflectiveness to it? Can you try probing your bed with a piece of plain white printer paper on it? I'm thinking maybe the IR probe isn't getting a good reading from your bed surface.

You can try adding an A and S parameter to your M558 command to try and increase probing consistency.
M558 A10 S0.003
this will cause the probe to probe up to 10 times if the consistency of two consecutive probe results are within 0.003mm of each other.

Try increasing your dive height perhaps? I'm not super familiar with the behaviour of the IR probes.
I can't tell from the number grid if that's an improvement or not. Does the image look more consistent?

Is there any direct lighting around your machine? is your machine around any natural (outside) lighting? I have read that florescent lighting and possibly LED lighting can cause issues.

Are the thick whites lines on the bed in your photo part of the bed, or part of a print? If they are part of the bed then it's possible that you may get a different trigger height when you probe over them, compared to probing over the dark grey areas.
The only types of lighting that affect the IR sensor are direct bright sunlight (no clouds in front of the sun), and bright tungsten halogen light. If the sensor detects too much of either, the LED will blink rapidly.

It part of the logo, when I saw this I was going to assume it was causing problems. OP's probe also looks like it is over the edge of the bed?

its hard to tell but it almost looks like the logo is clear or doesn't have black. that will trip up an ir sensor

Yes, the probe points will probably need to be adjusted so that the sensitive area of the IR sensor (roughly under the cylindrical black capacitor) are never off the edge of the bed or over the white areas of the logo.
