FSRs don't like heat; but if they are sufficiently well insulated from the bed then it is better to probe with the bed hot in case it changes shape.

You could use a DC-AC SSR with the control input connected between a spare heater output on the expansion connector and +3.3V. Configure it using M141.

It appears that there was an error with the data in my config-override file not being used that was causing the issue. I deleted the config-override file and added the M501 command to the end of my startup script after the probing and the first layer height is perfect every time now. Thanks for the expert advice as usual!

you need to double the steps/mm in the M92 commands for the axis that you changed the motors on!
