RE: PT100 board pinout/instructions?
Detailed documentation for what you're trying to do doesn't really exist for the simple reason that your approach is an odd one. Instead of using the Duet PT100 daughterboard like most everyone would do, you're using a third party board.
This is like buying a Honda Civic, and then then being upset that Honda does not provide detailed instructions for installing a Ford engine into the car.
I don't know why you spent 30 minutes of searching to find that page, if you go to the Duet documentation, type in "PT100" in the search box, that page you linked is the first result.
At any rate, the info in the table does match, though it is for generic PT100 boards and Duet 0.6/0.8.5. Assuming you have this specific board from Adafruit:

Then look at the schematic for the Duet 2 Wifi:

Connect the Vin pin on the Adafruit board to pin 8 of the SPIO temperature sensor board connector and so on.

I think the reason nobody has ported any other firmware to the Duet is that RRF is so hard toi beat. Whereas RRF has been so successful that others have already ported it to LPC1768/1769 boards, and a port to STM-based boards is under way.
Gotta say I agree with that. No way I'd go back to Marlin after experiencing RRF.

@random_task_1 Your pinout is incorrect.
I've taken the photo in the documentation, and overlaid your wire colors in text. The 4 pin side represents what your 4 pin side is. The 5 pin side represents what your 5 pin side should be. Looks to me like you've got the RX/TX flipped, which is why your screen is powering up (5v and GND are good) but not communicating.

Got the board from @srgallagher13 , it does not present as a USB port. Diag LED is on continuously. We'll work on it and advise if we come up with a solution, in the meantime we've provided him with a Duet WiFi instead.

PanelDue Touchscreen Replacements
I'm not big on self-advertisement, but also didn't know how to get the word out on something like this.

Woah, this is simply not true.
Before you purchased, you asked if we would support the Workbee. I said we could not, because we don't have a Workbee, and have no experience with it, but that we could provide general support for the Duet 2 (getting connected, etc).
You then emailed that you "got everything downloaded and got the control panel activate but I canβt get the router to move.".
We don't have a Workbee, so we aren't in a position to figure out what could be preventing you from moving it - we have no experience with how a Workbee is wired.
A "block on the SD card" doesn't make any sense, if the Duet can read it, your computer can read it. Plus, they even post it online, a s linked above.

- Define the expected output in terms of just response from the board that it properly received and ingested the command properly. NOT the action taken by the board

- Go back and categorize each g-code by which output endpoint is needed to read the result

If you can implement this ~24 man hours ("a few days", at 8hrs/day), I know several companies that would hire you. Keep in mind there are roughly ~200 G-code commands, so that's less than 7 minutes per command to flesh out a test. I don't know if I could even write all the possible permutations of a G-code (for example, M587 should realistically test for all possible types of SSIDs/passwords, to detect issues with escaped characters, etc) in less than 10 minutes, much less generate the expected response and save it to a comparison file.
Keep in mind that many g-codes would be interdependent, a simple example is M667, which selects CoreXY mode - but after selecting the mode, don't you have to test all the G-code again? What if selecting CoreXY mode and then probing the bed and then homing triggers a bug? For example in your G29 example - the bug only surfaced if z-compensation was previously active. Now all of the sudden it isn't 200 unit tests, since there are many, many possible permutations.
Again - I don't think anyone is ignoring the potential value with what you propose, we're just pointing out it may not be practical given the time/resource limitations of Duet3D. But if you want to try please don't let me discourage you! I'm sure dc42 appreciates all the help he can get.
