You can try adding some parameters to increase the accuracy.

M558 P8 I1 R0.4 F420 T6000 A10 S0.01

This will cause it to probe at least twice and will reprobe up to 10 times until 2 consecutive probe results are within 0.01mm

As for tuning the piezo sensor itself, try searching the forum for some tips on what others have used.

Glad it finally worked.

The config file is only read at startup. So any changes made to it will require a restart. The Web control will prompt to restart after saving a change.

It's not possible to slow down before the endstop, because it doesn't know where the endstop is before being homed. Typically homing would be done in two passes. A fast movement to the endstop, followed by a short movement back, and then a slower movement towards the endstop again for better accuracy.
